The head chef of Noma in Copenhagen faces allegations of psychological and physical abuse from dozens of former employees between 2009 and 2017.
Former staff describe incidents of punching, shoving, jabbing with kitchen tools and public humiliation. One allegation involves a sous chef forced to make a degrading statement after playing music during service. Other claims include collective punishment and physical prodding during kitchen operations..
René Redzepi said he accepted that parts of the accounts reflect harmful behaviour in his past and confirms he has undergone therapy. “To those who have suffered under my leadership, my bad judgment, or my anger, I am deeply sorry and I have worked to change.”
