
Dan Ottaway, former chef for England’s Queen Elizabeth II, has been appointed Executive Head Chef at Tulfarris Hotel & Golf Resort in Wicklow.
Ottaway brings experience from Michelin-starred kitchens and prestigious venues like the Sydney Opera House and London’s Royal Academy of Arts.
His menus will focus on seasonal, locally sourced Irish produce, collaborating with Wicklow farmers and artisans.
Tulfarris Hotel & Golf Resort has been approved for the Good Food Ireland Collection for its commitment to local sourcing and culinary excellence.
Ottaway aims to blend international techniques with Irish ingredients at The Fairways Restaurant and The Brasserie Bar.
