The Doyle Collection is celebrating Irish Heritage Month in March 2026 with a collaboration involving Waterford crystal and bespoke cocktails across its hotels.
Each signature bar created a unique cocktail served in Lismore Martini glasses inspired by Lismore Castle. The Sidecar at The Westbury in Dublin featured Honey Psalm with Redbreast 12-Year-Old Irish Whiskey. The initiative honoured Irish craftsmanship and hospitality through crystal and local ingredients.
Hotels in Ireland, London, and Washington, D.C. participated in the month-long celebration. Menus included Irish coffee, Guinness cake, and seafood chowder to support local producers.
