Ashford Castle has appointed Nicholas Heneghan as head sommelier, marking a significant milestone in his 28-year career at the five-star luxury hotel in Cong, County Mayo. The Mayo native joined the estate in 1998, initially working in food and beverage service as a Chef de Rang, lounge server and room service attendant. He transitioned to the castle’s sommelier team 22 years ago and has served as assistant head sommelier for over 11 years before his promotion in August 2026. The appointment strengthens the property’s wine and beverage offering and reflects continued investment in luxury hospitality talent in Ireland.

During his tenure, Heneghan has played a key role in developing Ashford Castle’s world-class wine programme, working alongside wine programme manager Robert Bowe. He led the move of the collection to the historic 16th-century wine cellars in 2015, where he curated and organised the collection, which now holds more than 600 unique wines. The tastings take place within these historic underground passages, which were originally a coal bunker and servants’ entrance, now transformed into a luxury wine tasting and private dining venue. Heneghan has also mentored and trained numerous sommeliers, many of whom have moved on to successful careers in leading international hospitality establishments.

The managing director of the Ashford Castle estate described the appointment as recognition of Heneghan’s exceptional talent and passion for hospitality, noting his dedication to continuous learning and excellence. The promotion is consistent with the castle’s approach of developing talent from within, with Heneghan among many staff who have built long careers at the estate. His expertise includes WSET training and specialist masterclasses covering renowned wine regions including Bordeaux, Mosel and Champagne, contributing to the distinctive character of Ashford Castle’s renowned wine programme.
