Hayfield Manor in Cork is marking three decades of luxury hospitality and culinary excellence with a limited edition three-course 30th anniversary €30 menu at its signature restaurant Orchids from 25 September to 31 October 2026. Inspired by an original 1996 wedding menu gifted by a guest Executive Head Chef Mark Staples and his team have crafted a nostalgic anniversary tribute celebrating Hayfield Manor’s culinary heritage and longstanding local supplier partnerships. Bridging past and present the exclusive menu mirrors the 1996 celebration course by course.

The classic tournedos of beef with port wine jus makes way for tender slow-cooked Irish beef cheeks in a rich bourguignon sauce. Seafood offerings are anchored by a locally sourced Ballycotton smoked salmon terrine while the fresh 1996 Summer Salad is reinvented as a vibrant classic Caesar salad. Complete with retro showstoppers like the baked Alaska the special menu reimagines nineties nostalgia using contemporary Cork produce.

As Cork city’s only five-star hotel Hayfield Manor is known as the home of celebrations playing host to unforgettable milestone events from proposals and weddings to anniversaries graduations and landmark family birthdays. Guests enjoying the special edition menu can extend their experience in one of the hotel’s newly refurbished luxury suites. The 30th Anniversary menu is available for €30 per head between 25 September and 31 October at Orchids Restaurant at Hayfield Manor on a limited basis with prebooked reservations only.
