The specific menu available depends on the departure city with each chef designing an exclusive meal inspired by their home gateway.

Chefs include Nancy Silverton of Osteria Mozza in Los Angeles, David Barzelay of Lazy Bear in San Francisco, Penelope Wong of Yuan Wonton in Denver, Isabel Coss and Matt Conroy of Lutèce in Washington DC, Tashi Gyamtso of Jimgu in Tokyo, Tomos Parry of Brat and Mountain in London and Manu Buffara of Manu in São Paulo. Highlights include Silverton’s spiral meat lasagna with passato and taleggio sauce and Barzelay’s grilled rack of lamb with carrot barbecue sauce.

Eligible passengers can pre-order meals via the United website or mobile app from five days before departure up to 24 hours prior. Passengers can view behind-the-scenes profiles on seatback screens. The initial launch from 1 August 2026 served over 60,000 flyers with satisfaction scores nearly 20 points higher than standard pre-ordered airline meals. The programme continues with fresh seasonal rotations into 2027.
