
Ashford Castle has appointed Dermot Fetton as the new Director of Food & Beverage, enhancing its culinary leadership team.
With over 35 years in the hospitality industry, Dermot brings extensive experience from Michelin-starred restaurants and prestigious five-star hotels in Ireland.
He started his career in 1989 with the Irish government’s tourism training agency, later owning two Michelin-accredited restaurants, Cloister Restaurant & Bar and Henry’s Bistro & Wine Bar.
Dermot has held significant roles at renowned properties like Castlemartyr Resort and Dromoland Castle Hotel & Resort, known for his commitment to high standards and empathetic leadership in the hospitality industry.
