Two Shores launches new Paladar Mezcal Cask Finish Irish Rum

The Two Shores x Paladar 10 Year Old Mezcal Cask Finish Irish Rum is a new, limited-edition premium spirit launched in July 2026 by Irish rum producer Two Shores Rum. 

This special expression was created in collaboration with Paladar, a celebrated Latin American-themed restaurant and rum cocktail destination based in Cork. The release marks a unique fusion of Panamanian distillation, traditional Irish whiskey cask finishing, and Mexican agave influence.

The rum begins its journey in Panama, where it is distilled from sustainably sourced, 100% pure sugar cane juice and aged for 8 years in American ex-bourbon barrels. The spirit is then transported to the west coast of Ireland for an additional 2 years of aging. [

In Ireland, the liquid is first matured in a single malt Irish whiskey cask before transitioning to its final vessel: a mezcal cask that previously held Irish whiskey. True to the distillery’s philosophy, it is bottled without any artificial colorings, sweeteners, additives, or chill filtration. 

The flavor features rich caramel, brown sugar, and soft vanilla, complemented by a subtle, earthy smokiness from the agave cask.  This 10-year-old rum is suited for sipping neat, on ice, or in premium cocktails. It is featured in Paladar’s “Jungle Bird” cocktail, alongside Campari, pineapple, lime, and bitters.

This latest addition to their range reflects growing innovation in the Irish drinks sector and appeals to consumers seeking unique cask finished spirits.
