Dublin’s Mercantile Hotel to reopen on June 4 with 77 new rooms

The Mercantile Hotel & Bar, located at 28 Dame Street in Dublin, will reopen on June 4, 2025, following a five-year transformation that the group claims enhances its historic charm.

The hotel now features 105 newly appointed bedrooms, an increase of 77 rooms, alongside two new bars offering an all-day dining experience and a cocktail-focused menu curated by chef Stephen Gibson.

Known for his renowned culinary work, Stephen Gibson brings over 30 years of expertise, crafting modern Irish bistro fare that utilises artisan ingredients from local producers.

The hotel’s design blends 19th-century elements with a contemporary aesthetic, preserving original Georgian features while incorporating new extensions and modern furnishings crafted by local suppliers.
