
The Misunderstood Heron, a Connemara seafood truck, received a €63,000 investment supported by a €31,700 grant from the Brexit Blue Economy Enterprise Development Scheme, implemented by Bord Iascaigh Mhara (BIM) and funded by the EU.
The funding allowed for new kitchen equipment, energy and waste efficiency upgrades, and the introduction of a bio-digestor, reducing food and packaging waste by 85pc and enhancing the business’s sustainability.
Located at Killary Fjord, the food truck is popular for its locally caught seafood, including mussels and organic smoked salmon, and sources bread and other ingredients from local artisans, with a menu that changes based on seasonal availability.
The business employs ten people, supports local food suppliers, and aims to increase turnover by 6pc, benefiting both the environment and the local economy, while preparing for a busy summer season showcasing West of Ireland’s cuisine.
