Simmons Restaurant, a new five-star contemporary Irish dining destination, has officially opened its doors at the InterContinental Dublin on Simmonscourt Road in Ballsbridge. Commencing dinner service on 1 September 2026, the establishment is the result of a significant six-month redesign project. The venue expands the hotel’s dining options with a focus on modern Irish cuisine.
The culinary team is led by Head Chef Abhimanyu Behl alongside Executive Chef Alberto Rossi, with front-of-house operations managed by renowned maître d’ Nick Munier. The design, inspired by the elegance of classic European grand cafés, features leather banquettes, Art Deco style chandeliers and a focal-point central bar clad in veined Calacatta Viola stone. The menu celebrates local provenance and premium Irish produce with global touches, featuring Carlingford oysters, Connemara scallops, dry-aged beef from McLoughlin Butchers and Atlantic halibut.
Desserts are curated by Executive Pastry Chef Orna Larkin. The restaurant operates for dinner Tuesday through Saturday from 5:30 PM to 10:00 PM with last orders at 9:45 PM. Reservations can be secured directly via OpenTable or through the InterContinental Dublin Dining page. The opening represents a significant addition to Dublin’s fine dining scene.
