Carton House, a Fairmont Hotel, has appointed the Adar Manor’s Killian Bowen as head chef of its Michelin-starred Morrison Room. Bowen will lead the culinary team to build on the restaurant’s established reputation for excellence in fine dining.
Bowen steps into the role following the departure of former head chef Adam Nevin, who moved to Glovers Alley in Dublin. He will take over the culinary direction of the historic venue located in Maynooth, County Kildare.
The culinary philosophy and vision includes an ingredient-led focus. Bowen favours traditional craftsmanship over modern digital food trends. His menus center strictly on the timeline of prime Irish regional produce and he prioritises teaching technical precision and building confidence in young chefs.
Bowen began working in professional kitchens at age 16 as a kitchen porter. He has built his career entirely within prominent Irish luxury hotels and Michelin destinations. His style is shaped by a deep respect for traditional kitchen team structures.
Despite having no formal family background in food, he quickly fell in love with the camaraderie, work ethic, and distinct discipline of the traditional kitchen brigade. Before moving to Carton House, Bowen built significant acclaim as the Head Chef at the renowned Adare Manor. Working directly alongside Executive Chef Mike Tweedie, he successfully oversaw kitchen operations while introducing distinct Nordic influences to the culinary programming.
The Morrison Room is located inside a restored, Palladian-style Manor House at the Carton House Estate. The dining room was first awarded its one Michelin Star status in February 2025. The restaurant serves contemporary tasting menus alongside an established Sunday lunch service.
