Michelin-starred chef Spencer Metzger will headline the Leadership Lunch at Hospitality Exchange 2026 and host an exclusive dining experience at The Merchant Hotel in Belfast, with the NI Hotels Federation organising the event. The conference takes place on 13 and 14 October at the Crowne Plaza Belfast, with Metzger delivering the keynote speech at the Leadership Lunch on 13 October and also hosting the Rising Star Awards. A gourmet dinner will take place on 12 October at The Merchant Hotel, where Metzger will showcase modern British cuisine.
Metzger runs Row on 5 with Jason Atherton, a restaurant that quickly earned Michelin stars, and has just opened Chez Rose in Mayfair. He progressed from apprentice at The Ritz London to achieving two Michelin stars, won the Roux Scholarship in 2019, and was the Great British Menu champion in 2022. His speech will cover his career journey, lessons on leadership and resilience, and mentoring new talent.
The Rising Star Awards celebrate young hospitality workers aged 30 years or under, with entries closing on 4 September 2026. NIHF President Vicky Green welcomed the addition of Metzger as a highlight for delegates, with the event bringing together tourism and business leaders from across the hospitality sector.
