
Dan Guerin’s Cush in Ballycotton, is launching new menus that provide customers with more choices. They will be offering a three-course Bib Gourmand awarded set menu or a tasting menu.
The three-course Bib Gourmand awarded set menu is available from 5pm to 7pm on Thursday, Friday and Saturday and all day Sunday and is priced at €44 per person. The tasting menu is from 7pm and is priced at €80 per person and diners can add a wine pairing for €40 entry level or €55 premium.
Ingredients include:
- Warm natural smoked haddock, potato velouté, crispy hens egg
- Aged Ballinrostig cheese agnolotti, white onion velouté, crispy shallot
- Slow cooked Irish beef cheek, Iona farm baby carrot, black garlic, madeira sauce
- Roast Irish chicken breast, crushed celeriac, boudin noir, hispi cabbage, madeira sauce
- Smoked salted caramel tart, beamish ice cream
- Baba glazed in Valentia island vermouth syrup, figs, whipped mascarpone cream
Cush is known for its commitment to using locally sourced and seasonal ingredients, including seafood from Ballycotton.
The restaurant has gained recognition in the Michelin Guide, being listed as one of the best seafood restaurants in the Republic of Ireland and receiving a Michelin Bib Gourmand in February 2022.
