The Tourism minister of the Spanish region of Castilla-La Mancha and its capital Toledo, Patricia Franco, hosted a presentation in Medley in Dublin.

Attendees enjoyed a menu of local gastronomy prepared by Chef Jesus Segura and a chance to win a trip to the region.

Jesús Segura, the only Michelin star chef in the province of Cuenca, has made his restaurant Casas Colgadas an iconic place for sustainable and local cuisine.

Jesús Segura shares the importance of blending innovation with tradition in gastronomy, emphasizing the value of sustainable and local products. He highlights his approach to cooking with a focus on upcycled ingredients and supporting local suppliers and resources.

His restaurant Casas Colgadas prioritises local suppliers, painters, carpenters, and suppliers of unique products, following a concept of ‘Cooking Cuenca’ that respects the environment and promotes sustainable practices.
