Singaporean chef Lewis Barker has taken over the kitchen at the two-starred Michelin Terre at Castlemartyr Resort in County Cork at the beginning of October. Concurrently, Hang Dai is launching a modern Chinese takeaway spin-off, Hawker, in Rathmines on 27th August. Chef Lewis Barker is the Executive Chef at Terre, the renowned two-Michelin-starred restaurant located at the 5-star Castlemartyr Resort in County Cork. He succeeded the founding chef, Vincent Crepel, taking over the kitchen leadership in late 2025. Under Chef Barker’s direction, Terre has successfully retained its two Michelin stars.
Barker relocated from Singapore, where he spent four years as the Executive Chef at Sommer. He became the youngest chef in Singapore to achieve a Michelin star at just 27 years old, only six months after Sommer opened. He refined his culinary skills at premier establishments including Vianney Massot, The Kitchen at Bacchanalia, and Cure in Singapore, as well as Vue de Monde and Quay in Australia. Barker focuses deeply on a hyper-local approach, forming collaborative relationships with Irish fishermen, foragers, and farmers.
His cooking marries classical French culinary foundations with contemporary innovation and subtle Asian flavour influences. The menu showcases seasonal local ingredients elevated by exact precision and artistry. Hang Dai’s new spin-off Hawker launches in Rathmines on 27th August offering modern Chinese takeaway.
