County Clare hosts several chief craft breweries and distilleries that form part of the local drinks production scene. Western Herd Brewing in Kilmaley near Ennis began operations on a hilltop farm along the Wild Atlantic Way. It produces small-batch ales using fresh spring water with its chief products including craft beers with a USP in the farm-brewed approach on a family site with natural water sources.
Burren Brewery in Lisdoonvarna operates as a microbrewery attached to the Roadside Tavern. It produces staple beers including Burren Gold lager and Burren Red ale with a USP in the characterful recipes crafted by the master brewer Peter Curtin and recognition in guides for its quality.
Burren Distillers in Ballyvaughan commenced construction in 2013 with first distillation in 2019. It produces Irish single malt whiskey using floor-malted barley and Sean Gael methods with its chief products centring on whiskey expressions with a USP in the revival of ancient Gaelic distilling traditions once thought lost and the sole use of floor malting among Irish micro-distillers for a sweeter profile.
Glendree Distillery in East Clare near Feakle started production with its first spirit in 2021 on a family farm. It produces spirits using 100 percent rainwater and Irish grain with its chief products including whiskey with a USP in the mountain location and reliance on local rainwater for distillation.
J.J. Corry in Cooraclare functions as an independent whiskey bonder. Names for the same public houee in Kilkee which was transplanted to Bunratty folk park, and using a mash book from Corry’s archives, it creates superior spirits by collaborating with distillers with its chief products including blended whiskeys such as The Gael aged in sherry and bourbon casks with a USP in the reimagining of Irish whiskey traditions through cask curation on a family farm. The whiskey production and distribution is now managed by Ahascragh distillery in Galway.
