County Tipperary’s craft breweries and distilleries operate across the Golden Vale and surrounding areas with a focus on local ingredients and traditional methods.
Whitefield Brewery, formerly known as White Gypsy Brewery, began in 1996 in Templemore at the Templemore Enterprise Centre on Railway Road in Kiltillane. This family-owned microbrewery produces authentic traditional style beers with emphasis on the best available malt and hops to create balanced profiles in styles such as Weiss Beer at 4.0 per cent and Ruby Irish Red Ale at 4.6 per cent alongside other offerings that reflect a commitment to quality craft brewing in small batches. Canvas Brewery commenced in 2011 in Aglish. The brewery crafts a range of beers in limited production that draw on local resources for flavour development.
On the distillery side, Tipperary Boutique Distillery functions at Ballindoney Farm near Clonmel in the Suir River Valley. Founded in 2014 with distilling operations starting around 2020, this single-estate facility produces Irish single malt whiskey and Irish single pot still whiskey from homegrown barley on the farm alongside gin and other spirits such as Watershed whiskey and The 80 Irish Apple Brandy.
It relies on grain-to-glass processes with water from the area’s pure sources and solar power for operations to create spirits tied directly to Tipperary’s fertile soil and heritage. Tullamaine Distillery operates on a family farm in the Golden Vale. This facility distils premium craft gin using water from a nearly 200-year-old well on the property with emphasis on farm-based production for quality output.
These operations add to Tipperary’s drinks scene through their reliance on regional farming ties and artisan techniques.
